Also called horse beans or broad beans. The mature fresh pods are large and green containing several beans about 1″ long each. Favas are eaten raw, freshly boiled or dried and cooked like any other dried bean. In some countries young small pods are cooked and eaten whole. Fava beans are easy to grow as a winter crop in parts of the U.S. with mild winters.
